So here’s how it works: A staff member pours a base liquid onto the ice-cold metal surface.  The liquid freezes into a creamy texture. At this point, they add whatever flavors you’ve asked for and spread the base out super-thinly across the cold surface. Then, they use a spatula and scrape columns of the ice cream , creating multiple rolls that get picked up, placed vertically in a cup and covered in your chosen toppings.
